Almond Joy Coconut Ice Cream
Ingredients:
Sweet Cream Base
2 large eggs
3/4 cup sugar
2 cups heavy or whipping cream
1 cup milk
Add-in's
3 almond joy bars
1 cup toasted coconut
Directions:
Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little at a time then continue whisking until completely blended, about 1 minute more. Pour in the cream and milk and whisk to blend.
(This base is from the Ben and Jerry's Ice Cream Cookbook) Put mixture in your ice cream maker and follow manufacturer's instructions.
While ice cream is "creaming" chop almond joy bars into chunks of desired size. Take 1 cup of coconut and spread evenly on a cookie sheet, place in toaster oven and toast...watch carefully because they brown up quick.
When ice cream is nearly done pour in your almond joy bars and toasted coconut. I usually put ice cream in a freezer safe container and freeze for a couple of hours to firm it up a bit more. If you like it soft eat right away!!
